Yesterday when I saw mention of flourless peanut butter cookies on Carrots n Cake, I knew I had to make them immediately. Tina had seen them on Peanut Butter Fingers so I went straight to the source for the details.
The original flourless peanut butter cookie recipe calls for 1 cup peanut butter, 1 egg and 1 cup sugar.
Not the healthiest thing you’re ever gonna eat, I can tell you that. I did some tweaks to make it work in my eggless kitchen, halved the recipe and quartered the sugar… and the result was lovely.
Vegan Flourless Peanut Butter Cookies
1/2 c peanut butter
1/4 c sugar
1/4 c oats
1 vegan egg – 1/2 tbsp ground flax + 1/2 tbsp chia seeds + 3tbsp water
First mix your vegan egg ingredients together and let sit for a few minutes. Then mix together everything in a bowl. Scoop out about tablespoon-size balls of dough onto a cookie sheet and bake on 350 for about 10 minutes. This makes about 10 cookies. Halfway through baking I pressed the cookies down into flat shapes with a spoon because the dough doesn’t spread on it’s own.
These are fantastic cookies. In fact, I licked the bowl clean… by licking my fingers. I never lick my fingers. I think it’s completely gross and unnecessary when utensils exist. And yet, I found myself going to town on this batter. It’s just that good. Make these.


Those things are so good. I made the for bible study last night and we could not quit eating them. I will have to try the ‘healthy’ version now!
I love you for making these vegan. My vegan kid is going to be so happy. PB cookies are her favorite.
