Tofu scramble with salad and avocado

I must confess to a major girl crush I’ve been harboring for Gena from Choosing Raw. When you cut this girl (please don’t), I predict she bleeds cool. She’s intelligent, well-spoken and, as one blogger described her, “sassy.” It doesn’t hurt that she eats a diet that appears to me to be nothing short of flawless but somehow manages to never come across as preachy, holier than thou or obnoxious. I consider her to beĀ likableĀ in every sense of the word.

Tonight I made her tofu scramble and, like all of her recipes I’ve tried (UMMM, banana soft serve!), it’s simple, clean and delicious.

If you hate eggs like I do or don’t eat them for dietary reasons, definitely give this one a try.

In other news, I put my HLS notes to work and followed Nicole’s advice to set up white poster board when photographing food.

I’m not an expert (obviously) but I think the deal is that the light will bounce off the paper instead of the food. Notice how you can see the seeds in the zucchini in the second photo but it’s totally washed out in the first? Something like that… Be on the lookout for improved photos with a cheap camera. It can be done.

  1. Gena is great!! I have worked with her and become friends with her through that (and by, ok, reading her blog every day she posts!). The one thing that strikes me about Gena is something that I would have never truly realized until meeting her in person and going out to dinner with her: the girl loves to eat. It’s awesome. Her attitude towards food is healthy. I confess, I am still working on that. She has adopted a vegan/high raw lifestyle because she feels better. And, to be honest, each of us should be doing whatever it is that makes us feel better. No wonder she is so great at what she does. She also happens to be fun, to have a great sense of humor, and to have a fun NYC-inspired style. LOVE it. hugs Gena,

  2. Whoa, whoa, whoa. I’m not supposed to be getting verklempt at 10 AM!

    Both of you ladies, Katie, and Elese, do me too much justice. Katie, I have a feeling we’ll long be friends — your contribution to the summit was amazing.

    And Elese, I’m SO glad that my love of eating was clear to you. (Was it the three courses that gave me away?) When you write a blog wherein you talk about what’s healthy a lot of the time, it’s easy for outsiders to perceive you as having a tepid, functional relationship with food, rather than a passionate one. I’m glad that the passion shows :)

  3. I’ve become smitten with Gena as well, having started reading her blog when you raved about her at HLS. *thankyou*

    As for your improved photography, you’re rocking it! I’m now shooting all of my blog photos with my Canon point and shoot. With decent lighting and setup, and sometimes a smidgen of editing in iPhoto, yes IT CAN BE DONE.

    Thanks for the HLS recaps, esp the photography write-up. Excellent and a reminder I need to do a write-up about my Phototasting workshop. HLS next year, woohoo!
