If you’re thinking to yourself, “Damnit I wish I had the richest, densest, most outrageously delicious cookie on the face of the planet,” then has Martha Stewart got a deal.for.you. [Note: Martha's recipe is not vegan. I used Earth Balance instead of butter, vegan chocolate chips and my version of vegan cream, which you can find here.]
Presenting salted chocolate-caramel shortbread cookies in all their buttery, sugary, chocolatey glory:
Not just caramel, no… chocolate caramel. Not just a cookie, no… a dense block of solidified butter. Not just sweet, no… salted sweetness.
Not just that… vegan.

Anything with salted caramel in it is divine. One of my favorite desserts!
I just don’t even know what to say about this. Amazing.
So, no one will notice is if I run off with the whole batch and scarf them down in my closet tonight, right?
I’m confused. How are these vegan? The recipe has butter, milk chocolate and cream.
I used earth balance, vegan chocolate chips and a mixture of reduced soy and coconut milk instead. I always adjust recipes like that.
It says click here for the vegan cream, but I don’t see a link. What combo of vegan milks do you use for the cream? Full fat canned coconut milk+soy milk? Thanks!
you caught me just as i was writing the vegan cream post for the link! i thought i could sneak it in before everyone woke up
1 cup coconut milk + 1 cup soymilk reduced over heat to 1 cup
here it is: http://sweettaterblog.com/2010/12/10/vegan-heavy-cream/
These look amazing! I saw them from Caitlin’s post on the cookie swap! My boys would flip over these…I am definitely going to make them!
These were amazing Katy! One of my favorite cookies of the night!
Heavy cream isn’t vegan? HUH???
