Mounds Ice Cream

3-ingredient vegan Mounds "ice cream"

Hold on, hold on. Let me just lick this sharp metal food processor blade clean.

Aaaaaand… ok.

First, if you’ve never made banana soft serve, you:

  1. Don’t read food blogs
  2. Don’t have a food processor
  3. Don’t have a soul

You decide. This is the easiest, cheapest, healthiest, fastest dessert you can make. Are you with me now? Good.

How To: Banana Soft Serve

I’ve made many a flavor (cherry, blueberry, peach, peanut butter, chocolate…) but today’s combo is pulling into the lead for BEST.EVER.

Chocolate coconut. Yep.

I simply combined: 1 frozen banana, 1 Tbsp cocoa powder (unsweetened), and 1 tsp coconut butter in a mini food processor until smooth.

And then I ate it. Really quickly.

Photographed to gone in 6 seconds flat.

And in case anyone was wondering… this is what my food photo studio really looks like:

OK then.

  1. For a minute I wondered if I was indeed without a soul, but mostly I haven’t made banana soft serve beause bananas make my skin itchy. TMI? Nah. Your Mounds “ice cream” might be cause to be uncomfortable for a while though. Mmmm Mounds… better yet, mmmmmm Almond Joy…

  2. Ha! The “food” section of our local paper in Birmingham featured Banana soft-serve above the fold. The article said that it was “very popular on the internet.” Indeed.

This is my go-to post-workout recover snack. Usually plain banana with a huge glob of PB or Almond Butter with Honey (local) on top. Boom.

  3. Okay, I read food blogs erry day, have a food processor, and am pretty sure I’ve got a soul. Oops.

But in all fairness,#2 is brand spankin’ new. Let the banana soft serve making begin!

  4. I loooove banana soft serve. My favorite version is a frozen banana, a little bit of almond milk, and a little bit of peanut butter. I am going to have to try it with coconut butter, that sounds amazing.

  5. What kind of food processor do you recommend? I am about to buy a juicer and the two are similar but I feed like I need them for separate functions.
